It looks like a birthday party and eats like a sugar cookie, which is the point. Funfetti cookies are a soft, buttery vanilla dough loaded with rainbow sprinkles, and they work best when you choose the right kind of sprinkle. Jimmies, the long thin rods, stay bright and hold their colour in the oven. Nonpareils, the tiny balls, bleed and turn the dough grey.

The dough gets a boost from a spoonful of cornflour, which makes the crumb softer and more tender. A little almond extract alongside the vanilla gives the cookies that bakery note, the flavour you recognise from a box of birthday cake. Cream the butter and sugar well, for a full 3 minutes, so that the cookies are light.

Fold the sprinkles in at the very end. Mixing them too long dissolves the colour into the dough and turns it a muddy purple. A few gentle turns with a spatula are enough. Press extra sprinkles onto the top of each dough ball just before baking.

Bake until the edges are barely golden. The cookies look underdone when they leave the oven, which is correct: they continue to set on the hot tray and stay soft and chewy for days.
