-
Simmer the ginger with the sugar and water over medium heat for 10 minutes, stirring until the sugar dissolves.
-
Strain through a fine sieve into a jug, pressing the pulp, and stir in the lemon juice. Cool.
-
For each glass, pour about 50 ml of syrup over ice and top with 150 ml of sparkling water.
Worth Knowing Before You Cook
Grate the ginger with the skin on.
Strain well.
Adjust the syrup to taste.
Keep the sparkling water cold.
Swaps and Variations
- If you only have ground ginger, a quarter-teaspoon for each tablespoon of fresh is the ratio usually given; it tastes warmer and less bright than the fresh root.
Storing and Reheating
The syrup keeps in the fridge for 2 weeks. Mix with sparkling water just before serving.
The Numbers per Serving
Per serving, calculated from the ingredient list with USDA FoodData Central figures (SR Legacy). A calculation, not a laboratory analysis: brands, cuts and how you measure change the real numbers. How the figures are worked out.
