Behind the Recipe
A ginger shot is small and fierce. It is a mouthful of fresh ginger, lemon and apple juice that tastes mostly of heat, and it is meant to be drunk in a single swallow.
The apple juice is there to soften the ginger, not to turn it into a sweet drink. Use a cloudy, unsweetened juice if you can. Blend the ginger with the juice, not on its own. The liquid carries it through the blades and gives a smooth result.
Strain through a fine sieve or muslin and press the pulp hard. The first spoonful of pulp holds a lot of the flavour, and wasting it makes a weaker shot. The result is a pale golden liquid with a sharp aroma.
Pour into six small glasses, about 50 ml each, and drink at once or keep chilled. A pinch of black pepper in the glass is a common addition. If it is too strong, add a splash of water or a little more apple juice.

Ingredient Swaps
- If you only have ground ginger, a quarter-teaspoon for each tablespoon of fresh is the ratio usually given; it tastes warmer and less bright than the fresh root.
