  3. If your oven runs hot, check at 24 minutes.
  4. Serve warm, not hot.

Swaps and Variations

  • Double cream won't whip if you swap it, but for the cooking itself, full-fat crème fraîche or a lower-fat single cream works in its place.

A Little Background

Goat cheese goes well with sweetness, and a spoonful of red onion marmalade under it makes the tart. The cheese melts into a creamy, tangy custard and the marmalade adds a sticky sweetness at the base.

Bake the puff pastry case partway first. Press the pastry into a tart tin, prick it and cook at 200°C for 12 minutes, which sets the base so that the filling does not leak. A pastry that is not pre-cooked comes out pale and damp.

Spread the marmalade over the base, crumble over the goat cheese and pour over the custard of eggs, cream and thyme. Do not overfill the case, since the custard will puff as it cooks.

Cook at 180°C for 30 minutes, until set and golden with a slight wobble in the middle. If your oven runs hot, check at 24 minutes. Serve warm, with a green salad dressed with lemon.
