Worth Knowing

  • Strain it well.
  • Include the lemon to keep the colour.
  • Drink it straight away.
  • Use the pulp in soup.

Behind the Recipe

Cucumber, celery, apple, lemon, spinach: five things and a blender. There is no need for a juicer, which many kitchens do not have.

Blend everything with a cup of cold water for a full minute until the mixture looks like a smooth green slush, then strain. A nut milk bag or a fine sieve both work. Strain it hard or it will be gritty. The pulp holds a lot of fibre that is pleasant in a smoothie but unpleasant in a juice.

The apple gives sweetness, so there is no need to add sugar. The lemon brightens the flavour and keeps the colour green for longer. Without it the juice goes brown within the hour.

Drink it cold, straight away, over ice if you like. If the juice is too earthy, add half an apple more. If it is too sweet, add more lemon. The leftover pulp can be stirred into soup or a smoothie rather than thrown away.
