Hoppin' John
Black-eyed peas and rice cooked together with smoked bacon, onion, pepper and celery. The Southern dish eaten on New Year's Day for luck.

Heat the oil in a large heavy pot over medium heat and cook the bacon for 5 minutes, until the fat renders. Add the onion, pepper and celery and cook for 6 minutes, until soft.

Stir in the garlic, thyme and paprika and cook for 1 minute.

Add the black-eyed peas, stock and bay leaf. Bring to a boil, then cover and simmer for 35 minutes, until the peas are nearly tender.

Stir in the rice and salt, cover and simmer for 18 minutes, until the rice is cooked and the liquid has been absorbed. Add a splash of water if it looks dry.

Turn off the heat, keep the lid on for 5 minutes, then fluff with a fork.
