How to Make Country Captain

  1. Mix the flour with 1 tsp of the salt and the pepper on a plate. Pat the chicken dry and coat each thigh in the flour, shaking off the excess.

  2. Heat the oil in a large, deep frying pan or casserole over medium-high heat. Fry the chicken skin side down in two batches for 6 minutes, then turn and fry for 3 minutes, until golden. Lift onto a plate and pour off all but 2 tablespoons of the fat.

  3. Add the onion and green pepper to the pan and cook over medium heat for 6 minutes, until soft. Stir in the garlic, curry powder and thyme and cook for 1 minute.

  4. Pour in the tomatoes and stock, add the currants and the remaining salt, and bring to a simmer, scraping up the browned bits from the base of the pan.

  5. Return the chicken to the pan, skin side up, and spoon the sauce around it, keeping the skin clear of the liquid. Cover and cook gently for 30 minutes. Meanwhile, toast the almonds in a dry frying pan for 3 minutes, until golden.

  6. Uncover and cook for 10 minutes more, until the chicken reaches 74°C / 165°F in the thickest part and the sauce has thickened.

  7. Scatter with the parsley and toasted almonds and serve over rice.

Some Background

Country captain is a Southern curry, and one of the oldest. It belongs to Savannah and to the Georgia and South Carolina coast, where the spice trade brought curry powder to the port cities in the nineteenth century, and it is an American way of cooking an Anglo-Indian idea. Nobody agrees on the captain. One story gives him as a British sea captain who brought the recipe home from India, and another as an officer who commanded local troops, the country captains of the East India Company. What the versions share is a chicken braised in a sauce of onion, green pepper, tomatoes and curry powder, with currants stirred in and toasted almonds on top, and it is served over plain white rice. It is gentle rather than hot. The currants add small pockets of sweetness, the green pepper gives the sauce a fresh, slightly bitter edge, and the almonds add crunch. The chicken is floured before it is browned, and the flour thickens the sauce as it cooks, so there is no need to add anything else. It was in American cookbooks by the middle of the nineteenth century, and it has never quite gone out of fashion in the South, where it is still a dish for a Sunday table or a covered-dish supper.
