Tips for Success
- Use a pot with a heavy base so the stew does not catch.
- Skim the fat from the top as it rises.
- Add water a cupful at a time if the stew reduces too far.
Some Background
Chicken, pork, beef, and a very big pot. Burgoo is a Kentucky stew built to feed a crowd, and the list of meats is deliberately mixed: chicken for lightness, pork for sweetness, beef for body. Together they make a broth that tastes deeper than any one of them would.
The vegetables go in at different stages. Onion, carrot and potato start the pot, tomatoes and corn follow, and the cabbage and beans arrive near the end. After four hours the meat has fallen apart and the potatoes have broken down and thickened the whole thing to a stew that stands a spoon.
Skim the fat off the surface as the pot simmers, and stir from the bottom every so often so nothing catches. Worcestershire sauce, hot sauce and a little vinegar added at the end sharpen the richness. Burgoo is better the next day, and it is traditionally served with cornbread or crackers.

The Numbers per Serving
Per serving, an approximate calculation from the ingredient list. Treat it as a rough guide: weights that include bone are counted as if all of it were eaten, so the figures run high. How the figures are worked out.
