Why the Method Is What It Is
Flour, water and a handful of barley: three things you already own, though the soup is rich enough to feed a table. Krupnik is the Polish barley soup, a thick, comforting one, flavoured with root vegetables, a smoked bone or sausage and a handful of dried mushrooms. It is found in every Polish home in winter.
Soak the dried mushrooms in hot water for 20 minutes, and strain the liquid. Put the smoked bone or bacon in a pot with water, bring to a simmer and cook for 20 minutes to make a broth. Rinse the pearl barley well before adding it, since the starch on the grains clouds the soup. Add the carrots, parsnip, celery, leek and potato, the barley and the mushroom liquid.
Simmer for 40 minutes, until the barley is tender and the soup has thickened. It will thicken further as it stands, so add hot water when you reheat it. Finish with chopped dill, salt, pepper and a spoonful of soured cream. Serve with dark rye bread. The flavour deepens overnight.
