Method

  1. Heat the oil in a large pan over medium heat and cook the onion for 6 minutes until soft.

  2. Add the garlic, ginger, curry paste and turmeric and cook 2 minutes, stirring, until fragrant and darker.

  3. Add the kumara, chickpeas, coconut milk, stock and salt and bring to a boil.

  4. Cover and simmer 20 minutes, stirring now and then, until the kumara is tender.

  5. Mash a few pieces of kumara against the side of the pan to thicken the sauce.

  6. Stir in the spinach until wilted, about 2 minutes.

  7. Take off the heat, stir in the lime juice and coriander and serve over rice.
