  4. Do not burn the garlic.

If You're Missing Something

  • A pinch of dried chilli flakes works in place of fresh chilli — start with about a third of the quantity the red chilli in the list implies, since dried chilli is more concentrated, and add more to taste.
  • A quarter-teaspoon of ground ginger per tablespoon of fresh is the standard ratio if you are working from the spice rack rather than a fresh root.
  • An eighth of a teaspoon of garlic powder per clove is the usual stand-in when you are out of fresh garlic — it will not caramelise the same way, but it carries the flavour.

Good to Know About Lentil Dal

Dal is the dish that proves the cheapest ingredients can be the best. Red lentils melt into a creamy soup, no soaking needed, and a spoon of spiced oil on top turns it into dinner.

Wash the lentils in cold water until it runs nearly clear. This removes dust and a little of the starch, so the dal is less likely to foam over as it cooks.

Simmer them with turmeric and ginger for 25 minutes, stirring now and then, until they have broken down into a thick, porridge-like soup. If your hob runs hot, check at 20 minutes.

The tarka is the finish: hot oil with cumin seeds, garlic and chilli, poured over at the last minute. Wait for the cumin seeds to sizzle and darken before you add the garlic, and take it off the heat when the garlic turns gold. Add the tarka at the table, with a squeeze of lemon. Use a deep pan, because the lentils swell and foam, and skim the froth off in the first few minutes if it rises.
