Good to Know About Low-Carb Taco Casserole
Salsa and cheese bubbling at the edges of the dish is the smell of a good taco night, without a tortilla in sight. Everything that makes a taco satisfying, the spiced beef, the tang of salsa and the melted cheese, goes into one dish.
The seasoning is a mix of chilli powder, cumin and smoked paprika, made from the cupboard, so you can control the salt. Brown the mince well and drain off excess fat, which would otherwise pool around the edges. Simmer the beef with the salsa for 5 minutes to reduce the liquid, so the casserole is moist but not wet.
The cream cheese is dotted over the meat and melts into it, giving a creamy layer without a sauce to make. The cheddar goes on top and browns. Serve it with sliced avocado, soured cream, lettuce and jalapeños. The leftovers make a good filling for lettuce cups the next day.
