Method

  1. Scrub the mussels under cold running water and pull away the beards. Discard any that are cracked, or any open ones that do not close when tapped firmly.

  2. In your largest lidded pot, soften the shallots in the olive oil over medium heat for 4 minutes without colouring. Add the garlic and bay and cook 1 minute more.

  3. Pour in the wine, raise the heat and boil hard for 2 minutes to drive off the raw alcohol.

  4. Tip in the mussels, clamp on the lid and cook over high heat for 4 to 5 minutes, shaking the pan twice, until the shells have opened.

  5. Lift the mussels into warmed bowls with a slotted spoon, leaving the broth behind. Discard any that stayed shut.

  6. Take the broth off the heat, whisk in the cold butter a cube at a time until glossy, then stir in the parsley and a good grind of pepper. Add the cream now if using.

  7. Pour the broth over the mussels, avoiding the last spoonful in the pan where any grit will have settled. Serve at once.
