  1. Salt the lamb and brown it hard in the oil in two batches, 8 minutes total.

  2. Return it all to the pan, sprinkle over the sugar and let it caramelise for 2 minutes, turning.

  3. Dust with the flour and cook 2 minutes, then stir in the tomato purée and garlic.

  4. Add the stock, bay and thyme, bring to a simmer, and cook covered 60 minutes.

  5. Add the turnips and carrots and cook 15 minutes.

  6. Add the potatoes and cook 15 minutes more.

  7. Add the beans and peas and cook a final 5 minutes, so they stay green. Rest 10 minutes, scatter with parsley and serve.
