Good to Know About Noodle Kugel
Salt the water, but leave the noodles slightly firm. They finish cooking in the custard, and noodles that start soft turn to mush. That is the one fix this recipe needs.
Blend the cream cheese with the sugar and eggs until smooth, then stir in the soured cream, milk, vanilla and cinnamon. Fold in the drained noodles and pour everything into a buttered dish. Make sure the noodles are all under the custard. Any that poke out dry into hard strands in the oven.
For the top, mix cornflake crumbs with melted butter and a little sugar and scatter over. Bake at 180°C / 355°F for 50 minutes, until the custard is set with a slight wobble in the middle. If your oven runs hot, check at 40 minutes.
It is served warm, cut into squares, and holds well for a crowd. A mix of cinnamon and a little sugar sprinkled on top gives a darker, sweeter crust.
