A dish for a table of eight, and one that holds well on a buffet. Potato kugel is a baked pudding of grated potato and onion, with a crisp crust and a soft middle.
Grate the potatoes and onion and squeeze them hard in a clean tea towel, because the water they hold makes the kugel heavy and grey. Mix with the eggs, flour, salt and pepper straight away. Potatoes darken quickly once grated. Preheat the tin with the oil in it. Hot oil on the base sets the bottom crust the moment the batter goes in.
Pour in the batter, level it and bake at 200°C / 390°F for 75 minutes. The top should be deep brown and crackly at the edges.
Leave it for 10 minutes before cutting into squares. A spoonful of apple sauce or soured cream on the side suits it well.
