Swaps and Variations

  • An eighth of a teaspoon of garlic powder per clove is the stand-in usually given when you are out of fresh garlic; it will not brown the same way, and it burns easily, so add it with the liquid.
  • Fresh herbs work in place of the dried oregano at roughly three times the quantity — a teaspoon of dried is about a tablespoon of fresh, chopped.

A Little Background

Sausage and pasta is a pairing that has been a weeknight standby in British kitchens for a long time, and the one-pan version is just the same dish with less washing up. The pasta cooks in the sauce, and the starch it releases thickens it.

Squeeze the sausage meat out of the skins and brown it in a wide, deep pan for 6 minutes, breaking it into pieces. Add the onion and garlic and cook for 3 minutes. Pour in the tomatoes and stock and bring to the boil, then add the pasta. Stir often at the start. Pasta sticks to the base of the pan in the first two minutes, before the starch has gelled.

Cover and simmer for 10 minutes, stirring now and then, until the pasta is tender and the sauce has thickened. Add a splash of water if it looks dry.

Stir in the spinach to wilt it for a minute and serve with a scatter of cheese.
