Dry the skin thoroughly. A wet skin steams and sticks, and a dry skin sears crisp in a hot pan. Lay the fillet in skin side down and press gently for 10 seconds so that it stays flat. Then leave it alone.
Trout is rich and delicate, so a 110 g fillet is a serving. Skin side down first, for 6 minutes, to render the fat and crisp the skin. Flip for 2 minutes. Lemon juice and parsley go in at the end, off the heat, so that the sauce stays sharp and the herbs stay green. The fish carries on cooking in the pan after it comes off the heat.
Trout is higher in phosphorus than white fish, so this recipe is written for two servings of 110 g each. Portion larger fillets to size. Serve with rice and steamed green beans. Eat the crisp skin if you like.
