Making Roasted Turkey Tenderloin

  1. Heat the oven to 190°C / 375°F (170°C / 340°F fan). Pat the turkey dry with paper towels.

  2. Mix the oil, garlic, rosemary, thyme, sage, paprika, lemon zest, lemon juice and pepper into a paste and rub it all over the turkey.

  3. Set the turkey in a roasting tin and roast for 40 minutes, until the thickest part reaches 74°C.

  4. Cover loosely with foil and rest for 10 minutes. Slice across the grain and spoon over the pan juices.

Why It Works

Do not skip the rest. A roast turkey tenderloin carries on cooking after it leaves the oven, and slicing it straight away lets the juices run onto the board. Ten minutes under foil keeps them in the meat.

A tenderloin is a long, lean muscle, so it dries out faster than a whole breast. Rub it with oil first, then the garlic and herbs, so that the rub clings and forms a thin crust. Rosemary, thyme, sage and lemon zest do the seasoning. There is no salt. Use a thermometer.

The pan juices are worth keeping. Spoon them over the sliced turkey, or stir a splash of water and a squeeze of lemon into the tin and scrape up the browned bits for a quick gravy. Serve with rice and steamed carrots or green beans, and keep any leftover turkey for sandwiches. A tenderloin is easy to carve: cut it into slices about 1 cm thick.

  • An eighth of a teaspoon of garlic powder per clove is the usual stand-in when you are out of fresh garlic — it will not caramelise the same way, but it carries the flavour.
  • Fresh herbs work in place of the dried thyme at roughly three times the quantity — a teaspoon of dried is about a tablespoon of fresh, chopped.
