  1. Heat the oil in a wide pan over medium heat and fry the courgettes with the garlic and half the salt for 12 minutes, until soft and golden at the edges.

  2. Boil the pasta in salted water until tender. Keep 200 ml of the water, then drain.

  3. Add the pasta to the courgettes with 100 ml of the water and crush some of the courgettes with a spoon.

  4. Off the heat add the Parmesan, basil, lemon zest and pepper and toss, adding water to loosen.

Why the Method Works

Cook the courgettes longer than you think. That is the secret of pasta con le zucchine, a dish that works only when the vegetable has gone past crisp, to soft, sweet and almost jammy.

Cut the courgettes into small cubes, so they cook evenly, and fry them in olive oil with garlic over a medium heat for 12 minutes. Do not stir all the time, since the pieces need to touch the pan to colour. Add a splash of the pasta water and crush some pieces with a spoon, which makes a sauce without cream.

Boil the pasta until just tender and finish it in the pan with the courgettes and a ladle of cooking water. Take it off the heat, add a handful of grated Parmesan and torn basil and toss until glossy. The dish is a family weekday supper and is best the moment it is cooked. A little lemon zest sharpens it.

Leftovers, Reheating and Keeping

Best fresh. Keeps for 2 days in the fridge.

Ingredient Swaps

  • An eighth of a teaspoon of garlic powder per clove is the stand-in usually given when you are out of fresh garlic; it will not brown the same way, and it burns easily, so add it with the liquid.

Serving Pasta con le Zucchine
