Peanut Butter Cookies
Dense, sandy peanut butter cookies with the fork-crosshatch pressed into the top. That pattern is not decoration — the dough is too stiff to spread on its own and needs flattening.

Method

Beat the butter, peanut butter and both sugars for 4 minutes until light and fluffy.

Beat in the eggs one at a time, then the vanilla, scraping the bowl well.

Whisk the flour, bicarbonate, baking powder and salt together and mix in on low until just combined. Fold in the chopped peanuts if using.

Chill the dough 1 hour.

Heat the oven to 180°C / 350°F and line two baking sheets.

Roll the dough into 40 g balls and roll each in caster sugar.

Space them 7 cm apart and press each twice with a fork, at right angles, to make the crosshatch and flatten the ball to about 1.5 cm thick.

Bake 10 to 12 minutes until the edges are set and lightly golden but the centres still look soft.

Cool on the tray for 5 minutes before moving to a rack.
