Philly Cheesesteak Stuffed Peppers: Step by Step

  1. Heat the oven to 200°C / 390°F (180°C / 355°F fan). Lay the pepper halves cut side up on a baking tray, brush with half the oil and bake for 12 minutes, until just softened.

  2. Meanwhile, heat the remaining oil in a large frying pan over high heat. Cook the beef in a single layer for 2 minutes, until browned, then move it to a plate.

  3. Add the onion and mushrooms to the pan and cook for 6 minutes, until soft and golden. Add the garlic, oregano, salt and pepper and cook for 1 minute. Return the beef to the pan.

  4. Spoon the filling into the peppers and top with the provolone. Bake for 12 minutes, until the cheese has melted and is bubbling. Scatter with the parsley.
