  1. Heat the oil in a large pan over medium heat. Add the cumin seeds and let them crackle for 20 seconds.

  2. Add the onions and cook for 10 minutes, stirring, until golden. Add the garlic, ginger, turmeric and ground coriander and cook for 1 minute.

  3. Stir in the tomatoes, potatoes, water and salt. Bring to a boil, cover and simmer for 20 minutes, stirring gently once or twice, until the potatoes are tender.

  4. Stir in the garam masala and cook uncovered for 3 minutes to thicken. Add the lemon juice and coriander.

Tips for Success

  • Take your time with the onions; golden onions make a sweeter sauce.
  • If the sauce is too thin, crush a few potato pieces against the side of the pan.
  • Add a splash of water if it catches on the base.

Potato curry begins with the onions and ends with the potatoes, and the order matters. Onions cooked for 10 minutes until golden give the sauce its sweetness; potatoes added too early turn to mash before the sauce has body.
