How to Make Potato Gratin

  1. Heat the oven to 170°C / 340°F (150°C / 300°F fan). Butter a 2 litre gratin dish with half the butter.

  2. Warm the cream, milk, garlic, salt, pepper and nutmeg in a pan until just steaming.

  3. Layer the potatoes in the dish, overlapping and pressing down. Pour over the hot cream mixture, which should just cover them. Dot with the remaining butter.

  4. Bake for 1 hour 5 minutes, covering with foil if the top browns too fast, until a knife slides in easily and the top is golden. Rest for 10 minutes.

Tips for Success

  • Do not wash the potato slices; the starch thickens the sauce.
  • Use a mandoline for even slices if you have one.
  • Cover with foil if the top darkens before the potatoes are tender.

Why the Method Is What It Is

Slice the potatoes thin and even, 2 mm if you can, and do not rinse them. The starch on the cut surface is what thickens the cream into a sauce, and washing it off leaves a thin, watery gratin.

Warm the cream and milk with the garlic before it goes over the potatoes. Heating it first means the gratin starts cooking at once and takes less time in the oven.

Layer the potatoes in overlapping rows, seasoning each layer. Press them down firmly so the liquid comes up and just covers them.

Bake slowly, uncovered for the second half, so the top browns and the sauce reduces. A knife should slide into the centre with no resistance. Rest it for 10 minutes. It firms up and cuts neatly. A gratin is among the best uses of cheap potatoes, and needs only cream and garlic to become a dinner party dish. It reheats well, so can be made the day before and warmed in the oven while the main course rests.
