- Dry the lettuce.
- Warm the tortillas so they bend.
- Roll tightly.
Why the Method Is What It Is
Season first, fill last. Chicken that has been cooked plain tastes of very little, and a wrap with a cold, wet filling goes soggy within minutes.
Cut the chicken into strips and fry it in a hot pan with the paprika, garlic powder, salt and pepper for 8 to 10 minutes, until golden and cooked all the way through. Let it cool for a few minutes, because hot chicken wilts the lettuce and warms the dressing to a runny sauce. Dry the lettuce well. Wet leaves make a wrap soft and limp.
Warm the tortillas for 15 seconds in a dry pan so they bend without cracking. Spread ranch down the middle, add lettuce, tomato, cheese and chicken, fold in the ends and roll tightly.
Cut in half on the diagonal. Wrap in foil or paper for a lunchbox. Chicken thighs work as well as breast, and stay juicier if you are cooking ahead.
