Behind the Recipe
It looks like a pizza and eats like a tart, and it is a way of using the vegetables that are left at the end of the week. The pastry is bought, and the oven does the rest.
Cut the vegetables into thin slices, about 5 mm, so that they cook in the time that the pastry takes. Thick pieces stay raw in the middle. Spread the pesto over the pastry, leaving a 2 cm border, and arrange the vegetables in rows. Do not pile the vegetables on top of each other. One layer lets them roast, and a pile makes them steam.
Score the border with a knife, brush it with beaten egg, and prick the middle with a fork so that the base does not puff up. Bake at 200°C / 390°F for 35 minutes, until the border is deep gold and the vegetables are tinged at the edges. If your oven runs hot, check at 28 minutes.
Crumble the goat cheese over the tart for the last 5 minutes. Cool for 5 minutes before slicing, and serve warm or at room temperature with a green salad.
