  1. Heat the oven to 200°C / 390°F. Salt the tomato slices on paper for 15 minutes, then blot dry.

  2. Lay the pastry on a lined tray, prick the middle, leaving a 2 cm border, and brush with the mustard. Scatter with the gruyere.

  3. Arrange the tomatoes in overlapping rows, drizzle with the oil and add the thyme and pepper.

  4. Cook for 30 minutes until golden. Scatter with the basil.

Why the Method Is What It Is

A tomato tart is a summer dish: the tomatoes need to be ripe, or the whole tart tastes of nothing. A thin layer of mustard and cheese under them protects the pastry and adds a tang.

Slice the tomatoes 5 mm thick and lay them on paper with a pinch of salt for 15 minutes, which draws out some of the water. Blot them dry before they go on the tart, because water is what makes the base soggy.

Prick a sheet of puff pastry, leaving a 2 cm border, and brush the middle with Dijon. Scatter on grated gruyere, then arrange the tomato slices in overlapping rows. Drizzle with oil, add the thyme and plenty of pepper.

Cook at 200°C for 30 minutes, until the pastry is risen and deep gold and the tomatoes have shrunk and caramelised at the edges. If your oven runs hot, check at 24 minutes. Serve warm or at room temperature, with a few basil leaves.
