Method

  1. Whisk the salep powder and sugar into the COLD milk until no lumps remain. Added to hot milk it seizes immediately.

  2. Set over medium-low heat and whisk continuously.

  3. After 8 to 10 minutes it will begin to thicken, and then thicken quickly. Keep whisking.

  4. When it coats the back of a spoon and a finger drawn through leaves a clear line, take it off.

  5. Stir in the rosewater off the heat — boiled, it goes soapy.

  6. Pour into glasses or cups and dust generously with cinnamon and pistachios.
