Seafood Chowder
A creamy chowder of white fish, mussels and prawns with potato, bacon and celery. The pub-menu classic, in an hour.

Melt the butter in a large pot over medium heat and cook the bacon for 4 minutes. Add the onion and celery and cook 6 minutes until soft, then the garlic for 1 minute.

Stir in the flour and cook 1 minute.

Whisk in the stock and milk gradually, then add the potatoes and bay leaf. Bring to a simmer and cook 12 minutes, until the potato is tender and the liquid has thickened.

Add the fish and simmer gently 3 minutes.

Add the prawns and mussels and simmer 3 minutes, until the prawns are pink and the fish flakes.

Stir in the cream, lemon juice, parsley, salt and pepper and warm through without boiling. Remove the bay leaf.

Ladle into warm bowls and serve with crusty bread.
