Shanklish Salad
A dry, sharp, thyme-rolled cheese crumbled over tomato and onion and dressed with oil. Shanklish is aged to the point of being almost blue, and the salad exists to soften it.

Method

Put the diced onion in a sieve and rinse under cold running water for 30 seconds. Shake dry.

Crumble the shanklish into a bowl with your fingers, into irregular pieces the size of a hazelnut. Do not chop it.

Add the tomato, rinsed onion and mint.

Dress with the oil, lemon and pepper and turn it over gently — twice, no more, or the cheese smears through the tomato.

Taste before adding any salt. Shanklish usually makes it unnecessary.

Spread on a flat plate, finish with the last of the oil and serve with bread.
