Thukpa
A warming Himalayan noodle soup of chicken, vegetables and egg noodles in a spiced broth, finished with lime and fresh coriander. Nepali and Tibetan.

Heat the oil in a large pot over medium-high heat and brown the chicken for 5 minutes. Add the onion and cook for 5 minutes.

Add the garlic, ginger, cumin, coriander, turmeric and chilli powder and cook for 1 minute. Add the tomatoes and cook for 5 minutes.

Pour in the stock and soy sauce, bring to a boil, then reduce the heat and simmer for 15 minutes.

Meanwhile, cook the noodles in boiling water for 4 minutes, drain and divide between 4 large bowls.

Add the cabbage and carrots to the broth and simmer for 4 minutes, then stir in the spinach for 1 minute. Add the salt and lime juice.

Ladle the soup over the noodles and finish with the spring onions and coriander.

- Out of spring onions? A small regular onion, finely sliced, or a few chives stirred in at the end both cover the job.

- A quarter-teaspoon of ground ginger per tablespoon of fresh is the standard ratio if you are working from the spice rack rather than a fresh root.
