Heat the oven to 200°C / 390°F (180°C / 355°F fan). Tear off four sheets of foil about 30 cm long.

Divide the zucchini and bell pepper between the sheets. Lay a fillet on each and top with the lemon slices, oil, oregano and pepper.

Fold the foil over the fish and crimp the edges with a double fold to seal. Set the packets on a baking tray.

Bake for 15 minutes, until the fish is opaque and the vegetables are tender. Open the packets carefully and scatter with the parsley.
