Dice the apple small and the rolls stay together. That is the most useful instruction for this recipe, and the one that decides whether the filling stays in the spiral.

The dough is a rich, soft one, made with milk, an egg and butter. Knead it for 8 minutes until it springs back, then leave it for 1 hour until doubled. Cut the apple into pieces no bigger than 5 mm. Large chunks tear the dough as you roll and leak juice into the tin.

Roll the dough into a rectangle, spread it with soft butter, brown sugar and cinnamon, scatter the apple and roll up tightly from the long side. Cut into twelve with a thread or a sharp knife and set the rolls in a lined tin. Cover and leave for 30 minutes.

Bake at 180°C / 355°F for 25 minutes, until golden. Ice them while they are still warm so that the icing melts into the folds.
