Behind the Recipe

Steak, rocket, parmesan, oil and vinegar: five things and about twenty minutes. Nothing hides in a dish this simple, so the steak has to be right.

Take the steaks out of the fridge 30 minutes before cooking so they are not cold in the middle. Dry them well and season with salt and pepper just before they hit the pan. Cook in a very hot pan for 3 to 4 minutes a side for medium-rare, longer for more. Rest the steak for 5 minutes before slicing. The juices settle, and the slices stay pink instead of bleeding onto the board.

Slice across the grain into strips about 1 cm thick and fan them over the rocket. The heat of the meat wilts the leaves slightly. Scatter over shavings of parmesan, then add the oil, balsamic and a squeeze of lemon.

Serve at once with roast potatoes or bread. Sirloin is the usual choice, though rump or ribeye work if cooked a minute longer.
