How to Make Cauliflower Pizza Crust

  1. Heat the oven to 220°C / 425°F (200°C / 390°F fan) and line a large baking tray with baking parchment.

  2. Pulse the cauliflower florets in a food processor until they look like rice. Tip into a microwave-safe bowl, cover and microwave for 5 minutes, or steam for 5 minutes, then let cool for 10 minutes.

  3. Tip the cauliflower into a clean tea towel and squeeze out as much liquid as you can, until it is very dry and you have about 300 g.

  4. Mix the cauliflower with the egg, grated mozzarella, Parmesan, oregano, garlic and salt until it forms a dough.

  5. Pat the dough into a thin round about 30 cm across and 5 mm thick on the parchment, pressing the edges a little thicker.

  6. Bake the crust for 20 to 22 minutes, until golden and firm and browned at the edges.

  7. Spread with the passata, top with the fresh mozzarella and bake for 8 to 10 minutes more, until the cheese has melted and is bubbling. Scatter with basil and slice.

  • Squeeze the cauliflower dry. This step matters more than any other, and a crust made from damp cauliflower will never firm up.
  • Keep the crust thin, about 5 mm. A thick crust stays soft in the middle and will not hold a slice.
  • Bake the crust plain before you add the toppings. This sets it and dries it out, and stops the sauce from making it soggy.

  • An eighth of a teaspoon of garlic powder per clove is the usual stand-in when you are out of fresh garlic — it will not caramelise the same way, but it carries the flavour.
