  1. Heat the oven to 230°C / 450°F (210°C / 410°F fan). Line 2 baking trays with baking parchment and brush the parchment with the oil.

  2. Whisk the flour, milk, garlic granules, paprika and salt into a smooth batter about as thick as single cream.

  3. Dip each floret in the batter, let the extra drip off, then roll it in the panko. Set the florets on the trays with a little space between them.

  4. Bake for 20 minutes, turn the florets over and bake for 10 minutes more, until golden and crisp at the edges.

  5. Melt the butter with the hot sauce in a small pan. Toss the florets in the sauce in a large bowl, return them to the trays and bake for 8 minutes more, until the sauce is sticky.

  6. Serve hot with celery sticks and ranch dressing.

Behind the Recipe

Cauliflower wings are what happens when the buffalo sauce is separated from the chicken. The wings themselves were invented in the 1960s at a bar in Buffalo, New York, and the recipe is now a template. A crisp coating, a hot sauce made with butter, celery and a cool dip on the side, and any food that is firm enough to hold the coating will do. Cauliflower is a very good candidate. It holds its shape in a hot oven, its mild flavour takes up the sauce, and its florets are the right size to eat with the fingers. The wings are baked rather than fried, and the crisp coating comes from a thin batter of flour and milk followed by a roll in panko crumbs, which are coarser and drier than ordinary breadcrumbs, and the oven is very hot. The sauce goes on after the first bake, so the coating has time to set and crisp, and the wings return to the oven for a few minutes so the sauce clings and dries to a sticky glaze. Sauced too early, or left standing too long, the coating turns soft, so serve them straight from the oven. They suit a football match or a party, and they are a good way to eat cauliflower.
