How to Cook Cheesy Potato Bake

  1. Heat the oven to 190°C / 375°F (170°C / 340°F fan). Butter a 2.5 litre baking dish.

  2. Layer a third of the potatoes and onion in the dish, season, and sprinkle with a third of the cheese. Repeat twice, finishing with cheese.

  3. Pour the milk around the edge so it comes about three quarters of the way up. Dot with the butter.

  4. Cover with foil and bake for 45 minutes. Uncover and bake for 20 minutes more until golden and a knife slides in easily. Rest for 10 minutes.

The Short Version

A good potato bake needs a lid. For the first 45 minutes, a sheet of foil keeps the steam inside and cooks the slices through; the top is then uncovered so the cheese can brown.

Slice the potatoes 4 mm thick. A mandoline is quicker and more even than a knife, but a sharp knife and patience will do.

Layer the potatoes, onion and cheese, seasoning each layer. Do not pack the cheese in the middle, since a thick layer melts into a greasy puddle. A thin, even scatter works better.

The milk is poured over until it comes about three quarters of the way up the potatoes. Too much and it floods; too little and the top layer stays hard. Rest for 10 minutes before serving. The bake works as a side for a roast or as a main dish with a green salad. It can be assembled ahead and kept covered in the fridge, then baked a little longer than the recipe says if it goes in cold.
