Why the Method Works
Three ingredients and a tray: that is all the equipment bark needs. The result looks like something from a shop and is eaten in a day.
Chop the chocolate small and melt it gently, in a bowl over barely simmering water or in the microwave in 20 second bursts. Stir between each. Take it off the heat before the last pieces have melted. The warmth of the bowl will finish the job, and chocolate that gets too hot turns dull and grainy when it sets.
Pour onto a lined tray and spread with a spatula to about 5 mm. Scatter over the pistachios, the cranberries and a pinch of flaky salt while the chocolate is still wet, so that they stick. Press them in lightly.
Leave the tray in the fridge for 1 hour, until the chocolate is firm and snaps cleanly. Break it into rough shards by hand. Store in a tin with paper between the layers, away from the heat.
Storage and Reheating
