Cookie Butter Bars
Chewy bars made with cookie butter spread, brown sugar and chocolate chips, baked in a tin.
This is what to bake in the first cold week, when the oven is welcome and the kitchen could do with the smell of cinnamon. Cookie butter is a spread made from spiced biscuits, and it brings its flavour with it.
Melt the butter and mix it with the cookie butter and sugar until smooth. Beat in the egg and vanilla, then fold in the flour, baking powder and salt, and the chocolate chips. The batter is thick, and should be pressed into the tin rather than poured. Do not bake until firm. The bars set as they cool, and an overbaked one is dry and crumbly.
Bake at 175°C / 345°F for 25 minutes, until the edges are set and the middle is still slightly soft. If your oven runs hot, check at 22 minutes.
Warm a spoonful of cookie butter and drizzle it over the top once the bars have cooled. Cut into sixteen.
