How to Make Garlic Beef Stir-Fry

  1. Mix the soy sauce, vinegar, cornflour, water and pepper in a bowl and set it beside the hob.

  2. Heat half the oil in a wok over high heat until it smokes lightly. Stir-fry the beef in two batches, 2 minutes each, and lift it out.

  3. Add the remaining oil and the beans and stir-fry for 3 minutes. Add a splash of water, cover and cook for 2 minutes.

  4. Add the garlic, ginger and spring onions for 30 seconds, then return the beef, pour in the sauce and toss for 1 minute until glossy.

Behind the Recipe

Slice the beef thin, against the grain. Chilling it in the freezer for 15 minutes firms the meat, so the knife glides through, and thin slices cook in 2 minutes and stay tender. Cut it just before cooking, while it is still cold and firm.

Garlic is the star here. Six cloves are sliced rather than minced, so that they turn golden and sweet instead of burning. Add the garlic after the beef, for the last minute only. Green beans go in first and steam through with a splash of water. The sauce is low-sodium soy sauce, rice vinegar, cornflour and water.

Flank steak has a lot of flavour for a lean cut and cooks quickly. Cooking it hot and short keeps the middle soft. Serve with rice. Leave out the usual oyster or hoisin sauce, which are very salty, and let the garlic and ginger do the work. Leftovers reheat quickly in a hot pan.

  • Out of spring onions? A small regular onion, finely sliced, or a few chives stirred in at the end both cover the job.

  • An eighth of a teaspoon of garlic powder per clove is the usual stand-in when you are out of fresh garlic — it will not caramelise the same way, but it carries the flavour.
