Toss the chicken with the lemon juice, oil, garlic, oregano, salt and pepper in a bowl and leave for 10 minutes.

Meanwhile, stir the yogurt, cucumber, garlic, lemon juice and dill together to make the tzatziki.

Heat a large frying pan over medium-high heat. Cook the chicken for 8 minutes, turning, until golden and cooked through.

Warm the pitas in a dry pan for 20 seconds on each side. Split them open and fill with the chicken, tzatziki, tomatoes, onion, lettuce and feta.

- If you are short of time, skip the marinade and toss the cooked chicken with the lemon and herbs instead.
- Squeeze the cucumber really dry; the tzatziki thins fast if you do not.
Why the Method Is What It Is
Cut the chicken into small cubes, about 2 cm across. They cook in 8 minutes in a hot pan and pick up the lemon and oregano marinade much faster than whole breasts do. A short marinade is enough. Whole-wheat pitas add fibre.
Tzatziki is the sauce, and it is simple: Greek yogurt, grated cucumber squeezed dry, garlic, lemon and dill. Squeeze the cucumber hard, in a clean tea towel, or the sauce turns watery. Warm pitas open easily. Heat them in a dry pan for a few seconds so they stay soft without tearing, then fill with chicken, tomato, onion, lettuce and a little feta. A squeeze of lemon over the finished pita brightens everything.
Feta is salty, so a small amount is enough. Pile the fillings loosely. Eat the pita straight away, because it softens as it sits. The chicken and the tzatziki keep separately in the fridge for 2 days.

- An eighth of a teaspoon of garlic powder per clove is the usual stand-in when you are out of fresh garlic — it will not caramelise the same way, but it carries the flavour.
- Fresh herbs work in place of the dried oregano at roughly three times the quantity — a teaspoon of dried is about a tablespoon of fresh, chopped.
