Tips for Making Greek Frappé
- Use instant coffee and not ground. It dissolves and traps air to make the frappé foam, and ground coffee will not.
- Shake with only a little water. A small amount of liquid whips into a thick, stable foam, and too much stays thin.
- Order the sweetness to taste. Two teaspoons of sugar gives a medium drink, one is lighter, and three or four is a sweet, dessert-like one.
