Khao Soi

Method

Fry the reserved 150 g of noodles in the hot oil in small nests for 60 seconds until golden and crisp. Drain on a rack.

Open the coconut milk without shaking and spoon the thick cream from the top into a wok. Heat over medium-high until it bubbles, splits and the oil separates, about 5 minutes.

Add the curry paste, curry powder and turmeric and fry in the separated oil for 4 minutes until deeply fragrant and darkened.

Add the chicken and turn it in the paste for 4 minutes.

Pour in the remaining coconut milk and the stock, add the fish sauce and palm sugar, and bring to a simmer.

Simmer, partly covered, for 35 minutes until the chicken is tender and the broth is rich and orange with oil floating on top.

Taste and adjust: it should be salty, faintly sweet and rich, with the sourness coming from the lime at the table.

Boil the remaining noodles for 2 minutes, drain, and divide between deep bowls.

Ladle the curry and chicken over, then top with a nest of crisp noodles, shallots, pickled greens, coriander and a lime wedge, with chilli oil alongside.

- Do not shake the coconut milk tin. You need the thick cream separately to crack the oil.
- Fry the paste properly — four minutes, until it darkens and the kitchen smells of it.
- The pickled mustard greens are essential. Their sourness is what balances the richness.
