Lasagna Soup
Everything in a lasagna, in a pot: sausage, tomato broth and broken noodles, finished with dollops of seasoned ricotta. Fifty-five minutes.

Brown the sausage in a large pot over medium-high heat for 8 minutes, breaking it up, until no pink remains and the bits are crisp at the edges.

Add the onion and cook 5 minutes in the rendered fat, then the garlic for 1 minute.

Stir in the tomato purée, oregano, basil and pepper flakes and cook 2 minutes until the purée darkens.

Add the chopped tomatoes, passata, stock, salt and sugar. Bring to a boil, then simmer 15 minutes.

Meanwhile mix the ricotta, Parmesan, parsley and salt in a bowl.

Drop the broken lasagna sheets into the soup and simmer 10 minutes, stirring often so they do not stick, until just tender.

Stir in the cream and taste for salt.

Ladle into bowls and top each with a spoonful of the ricotta mixture and a handful of mozzarella.

Cover the bowls for a minute so the mozzarella softens, then top with basil.
