Worth Knowing

  • Warm the spread for the swirl.
  • Do not overbake: the brownies firm up as they cool.
  • Cool completely before cutting.

Behind the Recipe

A jar of chocolate hazelnut spread, a few eggs and a small amount of flour: that is almost the whole recipe. Nutella is made of sugar, oil, hazelnuts and cocoa, which is a head start on a brownie because the fat and sugar are already built in, and the only thing the batter needs is structure from eggs and a little flour.

The batter is thick and glossy, closer to a paste than a pourable mixture. Whisk the eggs with the spread until completely smooth, then fold in the flour and a pinch of salt. The brownies bake into something dense and fudgy, with a deep chocolate and nutty flavour, and a slightly chewy crust.

Warm the spread for the swirl. Heat 3 tablespoons of Nutella in the microwave for 15 seconds until it pours, dollop it over the top, and drag a skewer through it for a marbled effect. Cold spread stays in lumps and tears the batter surface.

Bake until the edges are set and a skewer comes out with sticky crumbs, because overbaking makes the brownies dry. Let them cool completely in the tin, since they are very soft when warm. A handful of chopped toasted hazelnuts scattered on top adds crunch, and a pinch of flaky salt balances the sweetness.
