About This Recipe
What keeps a homemade popsicle from freezing into a solid, teeth-breaking block? Fat and sugar, in modest amounts. Plain fruit juice freezes hard, but add yogurt for creaminess and a little honey, and the mixture stays slightly yielding with a smooth, creamy bite. A banana adds both sweetness and body.
Blend the strawberries, banana, yogurt and honey until smooth, and taste before freezing. The flavour dulls when frozen, so the mixture should taste slightly sweeter than you want the finished popsicle to be. Use Greek yogurt for thickness and tang. Lemon juice brightens the fruit and keeps the banana from browning.
Fill the moulds to within 1 cm of the top. The mixture expands when frozen, and an overfull mould will push up the lid or spill. Tap the moulds on the counter to settle and remove air bubbles, which would leave gaps in the finished ice lolly. If you do not have moulds, use paper cups and wooden sticks, inserted when the mixture is half frozen.
Freeze for at least 4 hours, until solid all the way through. To release, run the mould under warm water for 15 seconds, then pull gently. Do not force it, or the stick will come out alone.
