  1. Stir the soy sauce, vinegar, cornflour and water together in a small bowl.

  2. Heat half the oil in a wok over high heat. Stir-fry the peppers and onion for 3 minutes. Add the garlic and ginger and cook for 30 seconds.

  3. Push the vegetables aside, add the remaining oil and the shrimp in a single layer and cook for 2 minutes, turning once, until pink.

  4. Pour in the sauce and toss everything for 1 minute, until glossy. Add the pepper and sesame oil and serve straight away.
