Method

Simmer both cuts of pork with the water, halved onion, garlic, bay, peppercorns and salt for 45 minutes.

Drain, pat dry and cool for 10 minutes.

Grill or griddle the pork over a high heat for 8 minutes a side, until charred and crisp at the edges.

Chop it all into 5 mm pieces with a heavy knife.
