Peel less, if you like. That is the quick tip, and one of the benefits of a slow cooker: the skins soften and the sauce comes out slightly pink.

Mix a few kinds of apple. Tart ones such as Bramley give sharpness and cook to a fluff, while sweeter ones give body and keep a little of their shape. Peel, core and slice them thickly, and pile them into the slow cooker with the water, sugar, cinnamon and lemon juice. Do not add more water than the recipe says. Apples release their own juice as they cook, and too much water gives a thin sauce.

Cover and cook on low for 4 hours, until the fruit is completely soft. There is no need to stir during cooking.

Mash with a potato masher for a chunky sauce, or blend for a smooth one. Taste, and add a little more sugar if the apples were sharp. Serve warm with pork or porridge, or cool and keep in the fridge for a week.
