  1. Boil the spaghetti for 1 minute under the packet time and drain, keeping a mugful of the water.

  2. Heat the oil in a wide pan until very hot and fry the squid in two batches for 2 minutes each with the garlic and chilli. Lift out.

  3. Pour the wine into the pan, scraping up the browned bits, and bubble for 1 minute.

  4. Toss in the pasta, squid, parsley and salt with a splash of the pasta water.

  5. Serve with the lemon wedges.

Notes for Getting It Right

  • Cook the squid for no more than 2 minutes.
  • Cook it in batches.
  • Keep some pasta water.
  • Serve at once.

Ingredient Swaps

  • An eighth of a teaspoon of garlic powder per clove is the stand-in usually given when you are out of fresh garlic; it will not brown the same way, and it burns easily, so add it with the liquid.
  • A dry vermouth keeps for longer than an open bottle of white wine and is the closer swap than a random white left in the fridge; for an alcohol-free version, use the same amount of stock with a squeeze of lemon.

What to Serve with Squid Ink Pasta

  • Green salad
  • Crusty bread
  • Lemon wedges
  • Dry white wine
